The consumption of fruits and vegetables is related to the prevention treatment chronic–degenerative diseases due presence secondary metabolites with pharmaceutical activity. Most these metabolites, also known as nutraceuticals, are present in low concentrations plant tissue. Therefore, improve health benefits horticultural crops, it necessary increase their nutraceutical content before reaching consumers. Applying ultraviolet radiation (UVR) has been a simple effective technology biofortify tissue metabolites. This review article describes physiological molecular basis stress response plants. Likewise, current literature on mechanisms effects UVA UVB accumulation different bioactive phytochemicals reviewed. shows that UVR an tool crops enhance content.
